Apollonia Bar

Apollonia bar is a cozy underground spot in the basement of Hinchcliff House, a fancy old building near Circular Quay. The House Made Hospitality group worked its magic in 2021, transforming this historic wool store into a four-level hangout.

This place is all about making a scene and having a good time. Named after the character Apollonia Vitelli-Corleone from The Godfather, it’s inspired by the real Sicilian bar from the movie.

Parts of this joint were carved right out of the sandstone when they built it, with some extra space chipped away to make room for the bar. There’s shiny brass and gold everywhere, and the main bar, with its swirly marble top, fits right into the historic vibe.

The place has its signature scent inspired by The Godfather, with candles and hand wash that bring orange, cherry, rosemary, and a hint of gunpowder. They use custom-made brass stamps to mark the ice in their cocktails – how cool is that?

The cocktail menu is small but packs a punch, focusing on Italian flavors. It’s split into chapters telling Apollonia’s love story, featuring drinks like Love at First Sight (gin, strawberry gum, amaro, and orange blossom) and the Wedding Procession (macadamia, amaro, bitters, and lemon).

They’ve got a house Negroni on tap, made with Widgets gin and their special vermouth and Campari mix. And get this – they make their amari using leftovers from the upstairs restaurants.

If you’re not into cocktails, no worries. They’ve got a bunch of Italian and Aussie drinks to choose from – beers, wines, and herbal liqueurs. And to go along with your drinks, they’ve got simple but tasty snacks like house-baked bread, charcuterie, olives, arancini, and even a meatball or fried eggplant sub.
