Silver’s Motel

Silver’s Motel is a whisky bar run by Michael Chiem and Tynan Sidhu. Chiem is the owner of PS40 – one of Sydney’s most acclaimed cocktail bars – while Sidhu is an industry veteran who’s worked at some of the best bars in the game. While doing so, Sidhu amassed a collection of over 350 rare, revered and retro whiskies. At Silver’s, he’s finally got a chance to share that collection.

Pick whatever’s being dispensed from the spirit optics on the wall, or leave yourself in the capable hands of the barstaff – within a few questions, they’ll be pouring you a whisky you’ll like. Even if you never thought you were a whisky person. There’s also a range of signature drinks fuelled by Chiem’s patented cocktail wizardy – but it’s hard to look past the Ice Magic Old Fashioned, or one of the boozy slushies on hand. Plus, there’s a concise line-up of wines-by-the-glass and custom-brewed pilsner on tap.
